Dover Sole

King of fish cookery Rick Stein shows us how to cook Dover sole on the bone in this easy-to-follow video masterclass.

Our tip to test the fish is cooked through without Rick’s gizmo is to insert the tip of a sharp knife gently in the thickest part. The flesh should be soft and opaque when it’s ready and if you touch the tip of the knife (not the sharp bit!) it should be warm.
